Grilled Chicken with Pineapple Avocado Salsa

If you’re looking for an opportunity to grill, you’ll want to try this grilled chicken with pineapple avocado salsa. This recipe is packed with fresh, summery flavors, including diced pineapple, chopped cilantro, finely chopped jalapeño, and creamy avocado. The chicken that you’ll top with pineapple avocado salsa is easy to prepare: just brush with olive oil, season to taste, and grill for approximately five minutes on each side.

Grilled Creamed Corn

Creamed corn is a classic summer side dish, and this grilled version is a delicious take on the traditional recipe. Grill the corn until the kernels are charred, then set aside to cool before removing the kernels from the cob. Next, melt butter in a pan or skillet and whisk in flour before adding in milk, cream cheese, and Monterrey Jack. Combine the cream mixture with grilled corn and garnish with fresh cilantro, if desired.

Next, you’ll mix in dry mustard and milk before removing from heat and adding three types of cheese and salt to taste. Finally, combine the pasta and cheese sauce and top with charred tomatoes. Bake in an oven-safe dish at 450 degrees for 10 minutes.

Raspberry Ricotta Cake

Plus, it can be made two days in advance to cut down on cooking on the day of the celebration. To prepare this cake, line a 9” cake pan with parchment paper and your favorite non-stick spray. Then, whisk together three large eggs, one and a half cups of ricotta, and half a teaspoon of vanilla extract until smooth. Next, fold in dry ingredients followed by butter and raspberries. Transfer the batter to the pan and top with a quarter cup of raspberries. Bake at 350 degrees Fahrenheit for approximately 50-60 minutes and allow the cake to cool for at least 20 minutes.
